- 1 cup of long grain rice (not instant rice)
- 2 eggs – no shells, just the egg. They have to be cooked.
- 1/2 cup of carrots cooked until soft or a 12 ounce bag of frozen mixed vegetables or a 10 ounce bag thawed and drained mixed vegetables.
Thaw the mixed vegetables and drain them in a colander. You can also steam them if you want.
It’s not necessary though. We are using carrots in this recipe so it doesn’t matter if the vegetables are fresh or frozen, but when you make your own diet, try to use fresh vegetables when possible because they are more nutritious.
Cook the rice by following the instructions on the package, or you can also cook it in your microwave as I do.
